The ABER Yeast Monitors can be useful for the
following core applications in a brewery
Automatic fermentation monitoring
Many of the World’s leading brewing companies now understand the benefits of producing a growth profile of the biomass over the entire fermentation period from start to finish. We can recommend the best Yeast Monitor set-up optimised for this operation.
The data from the Yeast Monitor can be used to determine:
- The initial concentration in the fermentor after pitching
- The state of cell growth; this can have an adverse effect on the quality of the final product. High rates of cell growth can also result in foaming and loss of product
- A target peak cell concentration; this value might be used to initiate cooling or a transfer over to other vessels
- The progress of the flocculation of yeast after chilling
The probe can be installed either directly into the side wall of the cylindraconical vessel above the cone or in a pumped pipe loop that circulates the vessels contents. The output of the vessel will relate to the volume of biomass present around the probe and can be calibrated to any desirable units of measurement, but commonly in cells/ml. The signal is then fed into a suitable data logging system and that data can then be profiled for any given fermentation.
